The Core Ratio

A starting ratio for pesto is 1:2:2:8. 1 part nut : 2 parts oil : 2 parts grated cheese : 8 parts herbs

Example Using 2 Cups of Basil

When you have 2 packed cups of basil, divide by 8 to find your base unit (1/4 cup), then multiply accordingly:

  • 1/4 cup nuts (pine nut, peanut, walnut, cashew, or combination)
  • 1/2 cup oil
  • 1/2 cup grated cheese
  • 2 cups packed basil or other fresh herbs

Instructions

Blend until smooth. Season with salt to taste. Store in a jar topped with oil to protect from air, then refrigerate.

Scaling Advice

Round odd measurements to more divisible numbers. For instance, if you have 3.5 cups of basil, add 0.5 cup of parsley or cilantro to reach 4 cups. Alternatively, switch to metric measurements for easier calculations.
